Check out the Forney Museum. It’s small, but it’s packed with awesome cars.

Boulder Lafayette C&C is the first Saturday of every month. Lots of meets all over the place on any weekend too.

North metro, south metro? Up north, C&C in Lafayette first Saturday of the month. There’s also the Golden Super Cruise, first Saturday of the month (lots of everything, muscle/rods most common). There’s a C&C on the 2nd Saturday of the month in Parker at the Vehicle Vault.
This weekend is the Mecum auction downtown. Every September, there’s the Colorado Grand in Vail (vintage race cars, mostly European, late 50's and older). There’s also the Shelby Museum in Boulder.

http://shelbyamericancollection.org/ up in Boulder.
The cars are in and out as the owners drop them off and pick them up, though.

I always enjoy a good old-fashioned spotting in the wild, and Cherry Creek is a great place to do that.

Welcome! Thanks to contributing to my rising house value! Feel free to go back home.
Seriously though, welcome. Lots of car stuff. Colorado National Speedway, a 3/8 paved oval in Dacono just north of the metro area every Saturday night for some local stock car action. Mile Hi Nationals are in a few weeks at Bandimere. Like others have mentioned, the Shelby Museum just outside of Boulder is legit, the Colorado Grand for some lovely vintage iron. You just missed Pikes Peak Hill Climb. Autocross season is in full swing. They normally run just east of Denver at the Front Range Airport and Pikes Peak Raceway in Fountain.
Car spotting on a nice Saturday morning in Morrison isn’t too bad. Loads of people making drives up into the canyon.

I do not, I was last there March of 2015 and Ken Miles’ car was the one with the spotlight on it:
I definitely was looking for it though :’(

I’m with you on the Morrison drive. I do it frequently, up through Kittredge and Evergreen. Then I’ll swing up through Conifer and then back through Deer Creek Canyon. Nice and twisty, and even better with a good cup of coffee and a cigar.

The Lafayette C&C has already been mentioned, but I think there’s also a C&C type event down in Parker (SE metro). I don’t know how often though.

Let’s see, there is the Automezzi Colorado in August for Italian cars. The British Conclave in September which is always pretty nice. You just missed it by a month or so, but the Colorado Concours d’Elegance & Exotic Sports Car Show is an incredible event that shows just about everything. Maybe go take a tour of Furniture Row Racing?
I’d go check out Wings Over the Rockies if you are interested in military aircraft at all.

Are you an F1 fan? The meetup group here is pretty cool and organizes some fun stuff associated with some of the races.

You bet! Also, surprisingly (or not?), the Broadway corridor has improved massively since I last lived here... Saw an F12 TDF @ Broadway & I-25 yesterday... Just nuts.

This is gold. Love classic european cars so I’ll have to put those shows on the calendar, both for this year and next. Thanks!
